Thai Summer Salad Recipe

Crisp summer veggies and hearty quinoa combined with a spicy peanut dressing make for a fresh & delicious summer salad! Top with crispy tofu or Thai infused turkey burgers for a quick weeknight meal.

Pretty much any veggie combination works here! So sub in whatever you have on hand! If you're not a fan of quinoa you could also use rice, farro or simply leave it out.

Serves 6

Thai Summer Salad

Ingredients

  • 1.5 cups cooked quinoa

  • 1 heaping cup cabbage, shredded or coleslaw

  • 1/2 cup cucumber, diced

  • 1 bell pepper, diced

  • 1/4 cup red onion or shallot, chopped

  • 1 cup carrot, shredded

  • 1 cup edamame, shelled

  • 1/2 jalapeno, seeded and stem, finely diced

  • ½ cup fresh cilantro, mint, and basil, chopped

  • 2 green onions, chopped

  • ½ cup cashews (I used sesame honey cashews!)

Salad Dressing

  • ¼ cup peanut butter, almond butter or sunflower seed butter

  • 1/2 teaspoon ground ginger

  • 3 Tablespoons soy sauce

  • 1 Tablespoon honey

  • 1 Tablespoon red wine vinegar

  • 1 teaspoon sesame oil

  • 1 teaspoon olive oil

  • sriracha hot sauce to taste

  • water to thin if necessary

Instructions

  1. Whisk together dressing ingredients in bottom of large salad bowl.

  2. Add cooked quinoa, cabbage, carrots, onion, jalapeno, bell pepper, cucumber, edamame, herbs & green onion in that order on top.

  3. Toss together a few minutes before serving and top with turkey burgers or crispy tofu if desired!

Thai Turkey Burgers

Ingredients

  • 1 small shallot, finely chopped

  • 2 tablespoons chopped cilantro

  • 3/4 tsp ground ginger

  • 1/2 jalapeño, stemmed, seeded finely chopped

  • 1 tablespoons Asian fish sauce

  • 1 pounds ground turkey, chicken or pork

Instructions

1. Stir together all ingredients, until just combined. Over stirring will cause a tough burger.

2. Divide and shape into 4 patties.

3. Light a grill or preheat a grill pan.

4. Brush the burgers with oil and grill over moderately high heat, turning once, until golden and crusty and just cooked through, 8 to 10 minutes.

Crispy Tofu

Ingredients

  • 1 block (12 to 15 ounces)extra-firm tofu

  • 1 tablespoon extra-virgin olive oil

  • 1/4 cup tablespoon soy sauce, coconut aminos or tamari

Instructions

1. Press as much water out of the tofu as possible. Cut into 1/2 inch cubes.

2. Marinate in soy sauce and olive oil for 15-30 minutes.

3. Preheat oven to 375 degrees. Line a baking sheet with aluminum foil or parchment. Coat with cooking spray.

4. Arrange tofu cubes in a single layer on baking sheet. 

5. Place baking sheet on center rack of oven and bake 30 minutes, flipping tofu halfway through cooking.

6. Remove from oven and let cool slightly before serving.
